Slow Cooker Chicken Chili

Ingredients
- 1 red onion, chopped
- 1 can (16 ounces) black beans
- 1 can (8 ounces) tomato sauce
- 10 ounces (1 package) frozen corn kernels
- 2 cans (14.5 ounces) diced tomatoes w/chilies (check the spice level- I used mild)
- 1 packet taco seasoning
- 1 tablespoon chili powder
- Salt and black pepper, to taste
- 4 or 5 boneless skinless chicken breasts
Instructions
- Combine beans, onion, tomatoes, corn, tomato sauce, chili powder, and taco seasoning in your slow cooker. Place chicken on top and cover with a thin layer of the sauce and beans.
- Cook on high for 6 hours.
- About 30 minutes before serving, remove chicken and shred in a separate bowl. Place shredded chicken into the slow cooker and stir in to combine with everything else.
- Cover and place slow cooker on "warm" setting for 30 minutes to allow chicken to soak in the chili flavor
