I am always looking for ways to add extra protein into our diet as we are vegetarian and what better way to do it than through dessert? lol. Peanut butter cookies are totally quick and easy to make, too, so the addition of vanilla protein powder is simple yet effective. These would be perfect to add as a "dessert" in my lunch bag or even just added to the cookie jar for a quick protein boost during the day.
