Ingredients
- 1 cup cashews, not soaked
- 1 cup coconut flakes
- Juice of 1 lemon
- 1 1/2 tablespoon honey, maple syrup or agave
- 1/8 cup lemon zest
Instructions

Process the cashews in the food processor until mixture resembles a coarse flour.

Then, add the other four ingredients until mixture forms a ball.

Dehydrate until you have a nice and moist cookie, about 8 to 10 hours at 105 degrees F. Process longer for a crispier cookie.
