Strawberry Sunshine Jello Salad

Notes*I have also prepared this Jello Salad in a deep 11 x 7-inch dish. The smaller dish yields thicker slices, so choose your preference. If you go with the smaller dish, just make sure that your dish is relatively deep so that it can accommodate all of the fruit.
Cooking for a Smaller Family? Cut all of the ingredients in half and prepare the salad in an 8-inch square dish. The rest of the instructions remain the same.

My aunt used to make a jello salad like this for all of us kids when she had a summer day care. I had totally forgotten about it until now! I can't wait to make this for my son, since it is truly a win - win. The kids love the bright color and the "surprise" inside, and mom can't complain since they are getting more fruit into their diet!
