When I first saw this picture, I thought that the yellow layer was pineapple, and I was intrigued that it was actually a gluten free and dairy free shortcake! I have a friend who can't have gluten, and am sure she would love this fresh and flavorful dessert. If you wanted to omit the whipped cream layers and use vanilla dairy free vanilla yogurt, you could make this completely dairy free!
