Gluten Free Chicken Noodle Soup

Ingredients
- 1 tablespoon olive oil
- 1 cup diced carrots
- 2 cups diced celery
- 1/2 cup diced onion
- 2 cloves garlic, finely minced
- 3 cups chicken broth
- 1 cooked chicken breast, diced into 1/2-inch cubes
- 2 ounces gluten free noodles, about 1/2 cup
- 1 tablespoon fresh parsley, finely chopped
Instructions

In a four-quart saucepan, heat the oil over medium heat. Add carrot, celery, onion, and garlic. Stir, cover, lower heat, and let the vegetables "sweat” (see note) for 5 minutes.

Uncover, add the broth, and allow to simmer for 10 minutes. Add the chicken and continue to simmer another 5 minutes. Then add noodles and cook until tender, about 5 more minutes. Taste and add salt and pepper as desired. Finally, add the parsley and serve.
Notes
The technique of allowing vegetables to cook in their own juices, called “sweating”, draws more natural flavor from the vegetables into the broth and is often used in quick-cooking recipes such as this.

I could not believe this was gluten free. I really enjoyed the chicken soup flavors and gluten free noodles!

I'd use different noodles for this soup, ones that aren't macaroni-shaped. This soup wasn't very filling, but it had a good taste.
