"Tonight I was going to make a meatloaf for dinner. I just wanted to try and think out of the box though. Had just baked a batch of cupcakes for my sons school and the muffin pan was staring me in the face. Why not meatloaf cupcakes? Well, it was a big thumbs up. These came out terrific! The whole family loved them. See my secret ingredient to make these extra moist and to add some added nutrition without anyone knowing."
