Ginger Pear Waffles

Ingredients
- 8 square (frozen) waffles (if you'd like, use gluten-free)
- 2 firm medium pears
- 1 tablespoon butter or margarine
- 1/4 teaspoon dried ginger (1/2 teaspoon for spicier taste)
- 1/4 cup pecans or walnuts, chopped
- 2 tablespoons brown sugar
- 1 cup (4 ounces) Jarlsberg Lite cheese, shredded
Instructions
- Toast waffles and set aside. Wash, core and thinly slice pears.
- Heat butter on medium-high and saute pears 4 minutes. Sprinkle on ginger, nuts and sugar and saute another minute, cooking pears and toasting nuts.
- Divide pears on four waffles. Top each with ¼ cup (1 ounce) cheese, then with second waffle.
- Wrap in microwave safe paper and refrigerate. Microwave on high 1 minute.
