Lemon Artichoke Pasta
"Lemon Artichoke Pasta is easy to make thanks to frozen artichoke hearts. This flavorful Italian-inspired dish is vegan and gluten-free. Years ago after visiting Rome, Italy, I became obsessed with artichokes. Roman cuisine is based around fresh, seasonal ingredients. I had the hearts with pasta, and when I returned from my vacation, I started making a version of this dish myself. However, prepping fresh artichoke hearts was a lot of work! But now when I make Lemon Artichoke Pasta, I take a shortcut and use frozen artichoke hearts. Not only are they convenient, they are much more affordable, and you can buy them year round."

If you can't find the frozen artichokes, the canned or jarred ones will work just fine too! Just make sure they are not the ones marinated in additional seasonings. Making use of these not only eliminates the guesswork of peeling them and removing the choke, but is also much more economical. I hate spending a high price per pound for fresh artichokes only to use a small part of the vegetable!
