Prosciutto, Asparagus and Parmesan Spaghetti

Ingredients
- 8 ounces angel hair pasta
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 2 cups sliced cremini mushrooms
- 4 ounces prosciutto, cut into strips
- 1 pound asparagus, trimmed and cut into 1-inch pieces
- 1 1/4 cup half and half
- 1/3 cup grated Parmesan cheese
- salt and pepper, to taste
- pinch freshly grated nutmeg
- 1/4 teaspoon red pepper flakes, add additional 1/4 teaspoon for more heat
Instructions

Cook pasta following the directions on the package. Drain and place back into the pot.

Heat olive oil in a large saute pan over medium heat. Saute the onion, garlic, and the mushrooms until almost done. Add the prosciutto and asparagus and cook until the asparagus is bright green, about 2 to 3 minutes.

Add the half and half, Parmesan cheese, salt, pepper, nutmeg, and red pepper flakes. Lower heat to a simmer and cook until sauce has thickened.

Pour the sauce with the prosciutto, mushrooms, and asparagus over the pasta and gently toss to coat.

Top with additional Parmesan cheese.

A bit too much pepper flake for me, but otherwise delicious! This would make a great, easy weeknight dinner for my family!

I was surprised that I enjoyed the dish since the combination of flavors is not usually my favorite. The sauce really brought the whole dish together.

OMG I don't even like asparagus, but I LOVED this dish! The texture contrast it provided, along with the combination of cream and olive oil, really made it stand out. The pasta cooks up so nicely, and the flavor combination is perfect. I adore mushrooms, might even add more next time - and you can never have too much Parmesan. I enjoyed the kick of the red pepper flakes, too. It's impossible not to go back for seconds!

I really liked this pasta! I was surprised that it had a kick to it, but it wasn't too spicy (and that's coming from a spicy wimp).

This pasta is delicious! I love asparagus with pasta, and this recipe has a nice kick to it. I would make it without the mushrooms though.

This is totally delicious, but pretty expensive. At just under $6 for 3 oz. proscuitto and $5 a lb. for asparagus it is definitely not a winter time dish unless it IS for something special! My total cost (with asparagus in the freezer!) was $11. Would I do it again? You bet!
