I made this soup this morning and it is delicious. I cooked half the recipe because I only had 1lb of parsnips. It turned out well and I still got about four servings because it had a very thick consistency so I kept adding more water. I adjusted for taste with more cumin seeds and cayenne pepper since we like out food on the spicier side.
