NotesWant to Prep Ahead? I like to chop all of the vegetables the night before, and then place them in a large zip-top bag along with all of the seasonings. In the morning, just dump the whole bag into the slow cooker, top with the chicken, and proceed with the rest of the instructions. It's the perfect dinner to start as you're rushing out the door to work!

That is such a great tip to do all of the chopping the night before! I am not much of a morning person, and between getting my son ready for school, packing his lunchbox, and preparing breakfast for the family, I'm busy enough as it is! This is a great alternative to a brothy chicken noodle soup, since it is chock full of veggies - if you are feeling a little under the weather, try this instead!
