Ingredients
- 4 peppers, either bell, cayenne, serrano or poblano
- 1 cup pine nuts or cashews
- 2 yellow bell peppers, seeded and chopped
- Juice of 1 lemon
- 1 teaspoon sea salt
- 1 tablespoon paprika
- 1 tablespoon nutritional yeast (optional)
- 1 cup basil (optional)
- 1/2 teaspoon cayenne pepper (optional)
- 1 garlic clove (optional)
Instructions
- Slice the four peppers in half lenghtwise and remove the seeds.
- In a blender or food processor, process the pine nuts/cashews, yellow bell peppers, lemon juice, sea salt and paprika. Add nutritional yeast, basil, cayenne pepper or garlic if desired.
- Stuff the four peppers with the blended mixture.
