Doughnut Holes

Ingredients
- 1 cup almonds, ground
- 1 cup dates, soaked and drained
- 1 dash vanilla powder
- 3 tablespoons coconut, shredded
- 1 cup dried pineapple (optional)
- 1 cup dried apricots (optional)
- 3 tablespoons coconut crystals/raw sugar plus 1 teaspoon cinnamon (optional)
- 2 tablespoons carob/cacao powder plus 1 teaspoon honey/agave/coconut syrup plus 3 drops olive/coconut oil
- 3 tablespoons shredded coconut (optional)
Instructions
- Ground the almonds for 1 to 2 minutes in the food processor.
- Add the dates until the mixture forms a ball.
- Add in the vanilla, coconut and either fruit, or chocolate/carob by hand. Roll into balls, then roll in coconut, carob/chocolate powder or cinnamon sugar.
