Cauliflower N' Cheese N' Stuff

Ingredients
- 1 head cauliflower, chopped
- 1 head-worth of cauliflower greens, chopped
- 1/2 cup quinoa
- 1 cup water
- 1 1/2 cup soy milk
- 1/2 pound cheese, broken up in some fashion
- 2 tablespoons Dijon mustard
- Black pepper, to taste
- 1/4 cup breadcrumbs (optional)
Instructions
- Steam the cauliflower to just barely tender, and then set it aside.
- Pour water and quinoa into a pot, bring the water to a boil, reduce to medium, and cover.
- In another pot, pour in milk and turn the stove heat to medium. Once the milk has reached temperature add in the cheese and begin whisking.
- Once all the cheese has melted in, raise the heat slightly until the mixture begins to bubble. Continue whisking throughout all of this. After about 5 minutes of whisking the lightly bubbling mixture, remove the pot from heat and stir in the mustard.
- In the same pot, mix the cauliflower, greens, and quinoa. Spoon the mixture into one casserole dish or individual ramekins and top with breadcrumbs if desired.
- Bake the dish(es) in a 375 degree F oven for about 7 to 9 minutes, until the top is golden.
