Loaded Paleo Sweet Potato Boats
"Feeling fatigued on a paleo, grain free or lower carb lifestyle? It might be worth looking into some healthy sources of carbohydrates like sweet potatoes! Whether or not you need to add more carbs, sweet potatoes are a healthy vegetable perfect for fall and winter, but are usually available year-round. These are stuffed with bacon, ground beef, scallions, and one of my favorite healthy fats- ghee! These are a meal in itself (feel free to add another side, like a salad or sautéed greens)."
