Eggplant Fries with Dipping Sauces

Ingredients
- 1 package Dominex Veggie Fries
- ZESTY CHIPOTLE DIP:
- 1/2 cup ranch dressing
- 2 garlic cloves, minced
- 5 drops chipotle sauce or hot sauce
- 1 tablespoon parsley, chopped
- SWEET AND SOUR SAUCE:
- 1/4 cup ketchup
- 1/4 cup white vinegar
- 1/4 cup sugar
Instructions
- To make the fries: Preheat oven to 450 degrees F. Place frozen fries in a single layer on baking sheet and bake for 15 minutes or until golden and crunchy.
- To make the Zesty Chipotle Dip: In a mixing bowl, combine ranch dressing, garlic, hot sauce and parsley. Serve with immediately with Veggie Fries or refrigerate until ready for use.
- To make the Sweet and Sour Sauce: Combine ketchup, vinegar and sugar in a small saucepan. Cook on medium-low heat until warm and sugar is dissolved. Serve warm or at room temperature alongside Veggie Fries.

Miss Maggie I went to that link you posted and I really don't think that is what wadeckiburn 9560778 is looking for since these eggplant fries obviously have a coating of some kind and I think that coating is what we are both looking for. I went to Perkins restaurant the other night and they had green bean appetizers with a coating that looked identical to the eggplant strips pictured above and they were delicious! Unfortunately I believe they were fried and I would prefer a coating I could bake (like the Dominex one) so hopefully they would be a little healthier. If anyone knows of such a recipe please let me know!

How do you make the fries? Ive never seen frozen Eggplant fries in the stores, but they sound good and I would love new ways to cook eggplant, also sounds healthier than potatoes and my kids love fries, so maybe with the right dipping sauce they would eat it, I know I will, and again Thank you for all these recipes.
