Ingredients
- 1 tablespoon olive oil
- 1/2 bunch scallions, diced into small circular pieces
- 2 garlic cloves, minced
- 2 inch piece of fresh ginger, finely grated
- 2 teaspoons curry powder
- 1 1/2 cup vegetable broth
- 1 head cauliflower, cut into small pieces
- 1/2 cup coconut milk
- 1/4 cup fresh parsley, finely minced
- Salt and black pepper
Instructions
- Heat a large skillet on medium heat. Pour in the olive oil. Allow to heat up for a few minutes. Add in the scallions. Cook for 30 seconds, stirring constantly. Add the garlic and ginger. Saute for 30 seconds. Sprinkle in the curry powder. Cook for 30 seconds while stirring constantly.
- Pour in the broth, cauliflower and coconut milk. Stir until all the cauliflower are coated and turn yellow. Adjust the heat medium-low so the liquid maintains a low boil. Cook for about 15 minutes, until the cauliflower pieces are tender and partially falling apart.
- Remove from the heat and stir in the parsley, salt and pepper to taste. Enjoy immediately alongside your favorite protein.

I love this recipe. I used a little too much ginger on the first try. On the second attempt, I used the creamier, canned coconut milk, and prefer that. This also tastes great with Trader Joe's "Creamy Corn and Roasted Pepper Soup".
