Paleo Coconut Cauliflower Rice
The beauty of cauliflower rice is that it can be paired with anything that you'd pair with regular rice. Plus, using cauliflower offers a significant carb cut. This Paleo Coconut Cauliflower Rice is no different. Since it has a hint of coconut taste to it, it pairs very well with orange chicken, as pictured above. It's savory and flavorful without being overpowering, making it the perfect side dish. In addition to being paleo-friendly and healthy, this cauliflower rice is also vegan and gluten-free. Quick and simple to make, this rice is sure to become your new go-to side dish!

Ingredients
- 1 head of cauliflower, trimmed into florets (about 5 cups)
- 1/2 cup of unsweetened shredded coconut
- 1 tablespoon of olive oil
- 3/4 cup of onion, finely chopped
- 2 teaspoons of garlic, finely minced
- 1 1/2 teaspoon of sesame oil
- 1 pinch of salt
Instructions

Use a food processor to pulse cauliflower and coconut until the mixture resembles grains of rice. You will need to do this in batches.

In a 12-inch nonstick frying pan, over medium-high heat, cook the olive oil, onions, and garlic until fragrant.

Stir in the cauliflower/coconut mixture, sesame oil, and salt. Toss over medium-high heat, stirring and cooking only until the mixture is warm. This should take about five minutes.

Use in place of rice to serve with any dish.
