Paleo Coconut Cauliflower Rice
The beauty of cauliflower rice is that it can be paired with anything that you'd pair with regular rice. Plus, using cauliflower offers a significant carb cut. Ingredients
- 1 head of cauliflower, trimmed into florets (about 5 cups)
- 1/2 cup of unsweetened shredded coconut
- 1 tablespoon of olive oil
- 3/4 cup of onion, finely chopped
- 2 teaspoons of garlic, finely minced
- 1 1/2 teaspoon of sesame oil
- 1 pinch of salt
Instructions

Use a food processor to pulse cauliflower and coconut until the mixture resembles grains of rice. You will need to do this in batches.

In a 12-inch nonstick frying pan, over medium-high heat, cook the olive oil, onions, and garlic until fragrant.

Stir in the cauliflower/coconut mixture, sesame oil, and salt. Toss over medium-high heat, stirring and cooking only until the mixture is warm. This should take about five minutes.

Use in place of rice to serve with any dish.
