Quick Thai Cucumber Pickle
"This Thai cucumber pickle is very quick and easy to make. Usually it is made with cucumber, shallots and chilis. It is mostly used as a condiment to accompany certain Thai dishes such as satay, Thai pork toast, Thai fish cakes, and Thai yellow curry. Although it looks like it contains a lot of chilis, it is almost not hot at all. We use the kind of chili that is not very hot in it, as the pickle is supposed to enhance the flavor of the main dish only. Yet, it is a must-have for the dishes mentioned above and you are going to enjoy the crunch."
