Blanching the green beans first is such a great idea! When I have sauted and stir - fried them before, the outside ended up wilted and crusty before the center was tender. This method gets rid of their raw, grassy flavor and helps them retain such a beautiful bright green color! A quick splash of lemon juice at the end is nice with this too.
