Ingredients
- 1 tablespoon + 1 tablespoon extra-virgin olive oil
- 1 pound mushrooms, sliced
- 8 scallions, chopped
- 1/2 cup roasted red pepper (jarred), drained and diced
- 1/8 teaspoon kosher salt
Instructions

In a large skillet, heat 1 Tbs. of the oil over medium-high heat until shimmering.

Saute half of the mushrooms until golden brown, 2-3 minutes.

Place the sauteed mushrooms on a plate, and set to the side. Repeat steps 1 and 2 with the remaining oil and mushrooms.

When the second batch is brown, stir in the scallions and peppers. Then, return the first batch of mushrooms to the pan.

Season with up to 1/8 tsp. of salt.
