That is such a great tip for pressing the moisture out of the tofu - this step makes all the difference since the tofu is then able to soak up all of the great flavors in the sauce. I don't have a special press as I don't use tofu very often, but what I did do is set it on top of an upside - down colander and place a heavy cast iron pot on top.
