"Mast o khiar is Iranian yoghurt and cucumber dip with fresh herbs, walnuts and raisins. This recipe uses labneh, strained yoghurt cheese, and that is a complete winner. It is so good I want to put it on everything I eat, desserts included. Making labneh is easy: full fat yoghurt strained until almost dry. If you line a sieve with a muslin cloth or a cheesecloth and set it over a bowl, keeping it in the fridge overnight, you’ll get lovely labneh."
