Ricotta Stuffed Peppers

"These Ricotta stuffed peppers are served as a starter meal. The Mediterranean dish can be prepared with bell peppers of your choice. I like to use elongated red peppers. However, you can get creative by using other bell pepper variations, sizes, and colors. The ricotta filling turns these peppers into a delightful starter or appetizer. I usually make these in the warmer spring and summer months because we grow our own peppers. Add a drizzle of extra virgin olive oil over the stuffed peppers, let the roast slowly in the oven and enjoy the most perfect starter dish this season."
