Bacon Fried Rice
I would like to order bacon with a side of rice. This fried rice recipe uses healthier turkey bacon which is definitely a unique twist to the traditional Japanese style recipes.
Ingredients
- 6 slices turkey bacon, chopped
- 3 large onions, chopped
- 2 green peppers, chopped
- 4 egg whites, slightly beatened
- salt and pepper, to taste
- 2 cups cold brown rice, cooked
- 1/2 teaspoon light soy sauce
Instructions
- Fry turkey bacon in a skillet. Remove from skillet when crispy. Drain the fat except for one tablespoon (save the leftover fat for later use for this recipe)
- Fry onions and green peppers until golden brown.
- Add egg whites and stir until slightly set. Remove from pan.
- Fry brown rice in another tablespoon of turkey bacon fat; at this point add the light soy sauce.
- Once heated, re-add the turkey bacon, onions, peppers, and egg whites.
