Buttermilk Banana Bread With Nuts

Ingredients
- 1 cup margarine
- 2 1/2 cups sugar substitutue suitable for baking
- 1 1/2 teaspoon baking soda
- 3 cups sifted white whole wheat flour
- 1 teaspoon salt
- 4 egg yolks, beaten
- 6 tablespoons buttermilk
- 2 teaspoons vanilla
- 2 cups mashed ripe bananas (4 to 5)
- 1 cup chopped nuts (optional)
- 4 egg whites, beaten
Instructions
- Cream margarine and sugar.
- Combine salt, baking soda and flour and add to creamed mixture, alternating buttermilk and egg yolks.
- Add bananas, vanilla and nuts (optional). Fold in egg whites.
- Pour into greased loaf pans and bake at 325 degrees F for 90 minutes. Makes 2 large or 4 miniature loaves.
