Corn and Bacon Muffins
"When you think ‘muffins’, you’re likely to imagine chocolate or blueberries in batter flecked with brown sugar. But they can come in savoury version and none the worse for it, just depends what you fancy. These cornmeal, bacon and sweetcorn muffins are a great breakfast or brunch food, with the double corn content: cornmeal or polenta in the mix and sweetcorn added in. Excellent for lunch too or just as a snack. A little bit like old fashioned corn fritters except baked into muffin shapes."
