- 12 corn tortillas
- 6 eggs, beaten
- 2 green onions, chopped (both white and green parts) - reserve chopped green stem for garnish
- 1 clove garlic, peeled and grated
- 1 cup diced red, yellow and orange bell peppers
- 2 ounces chopped fresh mushrooms
- 1 zucchini, grated
- 1 carrot, peeled and grated
- 1 jalapeno pepper, seeded and finely diced
- 2 radishes, grated
- 2 ounce baby spinach, finely chopped
- 1/4 cup minced fresh cilantro plus 1/4 cup of cilantro leaves, picked from stems (for garnish)
- 1 tablespoon coconut oil
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- oshredded cheddar cheese, for garnish
