Healthy Sweet Potato Waffles
"Sweet potatoes are a very nutritious vegetable high in vitamin A, vitamin C, and manganese, and are a good source of vitamin B6 and potassium. They are also high in fiber which makes them very filling. These sweet potato waffles are very easy to make and can be served with sweet as well as savory toppings. To make your meal more balanced, serve these sweet potato waffles with some blanched spinach, fried egg, avocado, and chopped parsley. A great recipe for using up leftover sweet potatoes."
