Jarlsberg Cheese and Sausage Breakfast Muffin

Ingredients
- 8 light sausage or soy breakfast links
- 4 eggs
- Black pepper
- 2 ounces Jarlsberg Lite cheese, grated (4 heaping tablespoons)
- 4 English muffins, fork split
Instructions
- Cut breakfast links into 1/2-inch pieces and divide between 4 2x4-inch glass or ceramic ramekins (or ovenproof baking cups). Place in microwave oven, well spaced and loosely covered with waxed paper. Cook on high 3 minutes.
- Carefully remove ramekins from oven. Place 1 heaping tablespoon cheese in each, covering sausage. Make shallow well in center of each, break an egg into a saucer and slide into ramekin. Gently pierce each yolk twice with knife tip. Dust with pepper to taste.
- Arrange in microwave, well spaced and loosely covered with waxed paper. Cook 2 to 4 minutes until yolks are set, soft or firm to taste. Serve, OR cover and refrigerate until needed.
- Toast muffins. Before serving, heat egg mixture in microwave 30 seconds to 1 minute, until hot. Loosen edges and slide on English muffins making sandwiches.
