In a Jiffy Corn Casserole-Revised
"This casserole has been around forever! It's so retro and I love that about it. Passed down from generation to generation. My version is made a little more healthy using lower fat ingredients. You know that little box of corn mix. You probably have it in the back of your pantry. Go find it and grab a few things from your fridge and you will have this ever popular casserole in no time at all. Great for your holiday table or just as an easy side dish for a weeknight meal. Sweet enough yet still a savory dish. Scrumptious!"

Corn casserole is one of my favorite thing to make for my holiday guests, and this jiffy recipe makes it so much simpler and quicker to prepare. I like to add diced fresh or pickled jalapenos to mine for a little bit of a kick. I just don't really like canned corn, so I would substitute frozen thawed corn or fresh corn that has been blanched, and blend half of it to replicate the creamed corn. Very yummy!
