Ingredients

  • 4 large skinless chicken breasts
  • 1 can light cream of chicken soup
  • 1 can light cream of celery soup
  • 1 can light cream of mushroom soup
  • 1/2 cup celery, diced
  • 1 cup instant brown rice

Instructions

1. Mix the 3 cans of soup and rice in the slow cooker.

2. Place the chicken on top of the mixture, and then add the diced celery.

3. Cook for 3 hours on high or 4 hours on low.

The chicken itself was a little bland and slightly dry, but I really liked the rice mixture with the soup. That was definitely my favorite part. I would even try making this recipe without putting the chicken in!

This was very creamy, which I love. I'm not a big fan of celery, so I might omit it next time.

I just did a search for this recipe and found a nearly identical one on about.com. The only difference is that it uses 1 to 1-1/2 cups converted rice and has a cooking time of 6 to 7 hours on low. The one person who reviewed it says it turned out tasty. So I would say you don't need to add any other liquid. I can't imagine this recipe with no other liquid added. I must be missing something. Maybe it is RTU soup as another questioned.
