My husband absolutely loves Jambalaya and I am always looking for these recipes. I wonder if I could substitute healthier olive oil for the butter? I am also concerned with overcooking the shrimp. Thirty minutes is a long time and it might become tough. Could the cooking time be reduced?

You can definitely substitute olive oil for butter! I would use slightly less olive oil though, about three tablespoons for every 1/4 cup of melted butter. When cooking the shrimp, don't feel as if you must stick to exactly 30 minutes of cooking time. Keep an eye on the shrimp, noting its color and shape. Once the shrimp is pink and has formed a C-shape, it should be ready to eat!
