    Ingredients

    • 2 whole chicken breasts, skinned
    • 1 cup water
    • 1 1/2 cup Pomi Strained Tomatoes
    • 1 small onion, diced
    • 1 small carrot, diced
    • juice of 1 lemon
    • 3 tablespoons olive oil
    • salt and pepper, to taste

    Instructions

    1. Simmer chicken breasts in water, tightly covered, with ¼ teaspoon salt, onion and celery until tender (about ½ hour), adding water if necessary.
       
    2. Cool, drain, remove bones and slice breasts. Mix the lemon juice with olive oil, ¼ teaspoon salt, pepper and Pomì.
       
    3. Pour a small portion of the sauce onto a platter, place the sliced chicken breasts on top and pour the remaining sauce over the chicken.
       
    4. Garnish with lettuce.
