Banana Ginger Muffins
Not all healthy muffins for breakfast are the same, as so many healthy muffin recipes are bland and flavorless. Luckily, this Banana Ginger Muffins recipe combines the richness of full fat muffin recipes with the good-for-you benefits of fruit recipes.
Ingredients
- 2 ripe bananas, mashed
- 1/2 cup applesauce
- 1 3/4 cup whole wheat flour
- 1/2 teaspoon stevia
- 1/2 cup vegetable oil
- 1 inch piece of fresh ginger, peeled and grated
- 1/4 cup almond milk (feel free to use skim milk or soy milk as well)
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Pre-heat your oven to 325 degrees F.
- In a large bowl, mix together the bananas, applesauce, flour, stevia, ginger, oil, almond milk, lemon juice, vanilla, baking soda and salt until everything is well combined.
- Using a spoon or ice cream scoop, scoop the batter into muffin tins either lined with cupcake liners or sprayed with cooking. Be careful not to overload each space in your muffin tin, as these muffins will rise a bit during baking.
- Bake the muffins until a toothpick comes out clean, about 20 to 30 minutes.
