Billy's Baked Macaroni and Cheese

Ingredients
- 2 cups uncooked elbow macaroni
- 1/2 cup butter substitute
- 1/2 cup unbleached flour
- 1 1/2 cup fat free milk
- 1 1/2 cup low fat sour cream
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 10 ounces bar mild low fat Cheddar cheese, grated
Instructions
- Preheat oven to 350 degrees F.
- Cook macaroni in lightly salted boiling water according to package directions.
- Drain and rinse with cold water. Pour into a 3 quart casserole dish.
- In a saucepan, melt butter substitute and stir in the unbleached flour. Gradually stir in fat free milk and low fat sour cream.
- Add salt and pepper. Cook over low heat, stir constantly until sauce thickens.
- Reserve one cup grated low fat cheese for the top of the casserole. Toss macaroni with remaining low fat cheese.
- Pour sauce over macaroni and mix thoroughly. Sprinkle with the cheese that is left.
- Bake for one hour, or until light brown.
- Serve immediately.
