I don't understand why this is considered a healthy recipe, with all of that cream in it, but it is delicious all the same. You gotta splurge a little bit sometimes! The only thing I would do differently is to use a nice marsala wine that you would like to drink with it rather than the cooking wine. I've found some of these cooking wines to have added salt or other flavor notes in them.

What?!! to make excellent Lowfat Alfredo sauce: melt 2 T butter, whisk in 4 t flour. Cook a few mins whisking constantly. Add 1 1/4 cups 1% milk, cook while whisking until thickened. Add 1/4 t salt, 1/8 t pepper, and a pinch of nutmeg. Toss with cooked pasta and parmesan or romano cheese. enjoy.
