Butternut Squash Mac and Cheese with Goat Cheese
"A lighter, healthier and kid friendly stovetop mac and cheese, with a beautiful texture and a big flavor boost from roasted butternut squash, goat cheese and smoked paprika. An entire roasted butternut squash goes into this recipe, reducing the fat content and making the sauce extra nutritious! It is packed with flavor thanks to a little smoked paprika and creamy, tangy goat cheese. This is a complete and healthy meal for the whole family. (You can leave out the smoked paprika if you like, but it just adds a little flavor - no heat.)"

I love the flavor and versatility that butternut squash has, but I sometimes have trouble cutting the darn thing in half in order to prepare it. If you are like me and don't have a lot of upper - body strength, or a really good big knife, you can find butternut squash, already cubed, in the freezer section! This recipe looks like a very grown - up version of the childhood treat. I can't wait to try it!
