Simple Broccoli Quinoa Salad
"If you are looking for a simple and satisfying vegan meal, you are in the right place. Regina my Skinny Sweets Daily partner came up with this delicious and healthy way to enjoy quinoa. This was so easy to prepare and versatile at the same time. Add in more veggies if you like but, it’s sensational just as it is. Of course if you want some non vegan protein, try adding some grilled chicken or fish. Healthy is the name of the game!"

I am not vegan, but I love healthy side dishes which incorporate whole grains and veggies. This would be the perfect side for grilled fish or chicken when spending the evening out on the patio! The lemon gives a nice brightness to the broccoli, and the chopping takes seconds when done in a food processor!
