Smoked Salmon and Cucumber Sandwich

This cold sandwich with the classic combination of smoked salmon, cucumber and lemon can be whipped together in minutes and tastes amazing. Try for breakfast or brunch on a whole-wheat bagel.

Ingredients
- 1 tablespoon lemon juice
- 2 1/2 tablespoons olive oil
- 1 pinch salt
- freshly ground black pepper to taste
- 8 thin slices good quality Italian bread
- 6 thinly sliced smoked salmon or lox
- 1/2 cucumber, peeled and thinly sliced
- 1 cup watercress or basil leaves, or mixed baby lettuces
Instructions
- Whisk together the lemon juice, olive oil, salt and several grindings black pepper.
- Lay out 4 slices of the bread and brush lightly with some of the dressing.
- Top with the smoked salmon, cucumber and greens.
- Drizzle with the remaining dressing and cover with the remaining slices bread. Press down lightly and cut into halves.
