Avocado and Mint Aiolis
Avocado and Mint Aiolis can be poured over veggie burgers, wraps and crunchy salads. You can use them as a dip for vegetables, crackers, or even as a spread atop pizzas! It’s the classic French sauce, a fantastically creamy, savory “mayonnaise sauce†that is a snap to make.

Ingredients
- AVOCADO AIOLI:
- 1 avocado
- 1/4 cup cashew creme
- 2 tablespoons basil or cilantro
- 2 tablespoons lime juice
- 1 clove garlic
- 4/5 teaspoon tumeric
- salt and pepper to taste
- RAW MINT AIOLI:
- 1/2 cup cashews
- 1/4 cup water
- 1/4 cup fresh mint
- 2 tablespoons lemon juice
- 2 cloves garlic
- 1/2 teaspoon salt

FOR AVOCADO AIOLI:

Blend cashews until creamy. Add avocado, lime and cream again. Stir in spices by hand.

FOR RAW MINT AIOLI:

Blend cashews until creamy. Add the rest and blend until creamy. Best chilled.
