Lite and Luscious Potato Cheese Soup is a creamy and comforting soup that will fill you up without filling out your waistline. Ingredients
- 2 1/2 pounds Russet potatoes (about 6), peeled and chopped into 1/2" cubes
- 4 cups Chicken stock
- 2 cups Reduced fat milk
- 1/2 Yellow onion, peeled and finely chopped
- 2 cloves Garlic, peeled and finely minced
- 2 teaspoons Vegetable oil
- 1 1/2 cup Reduced fat sharp Cheddar cheese, divided
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 2 Green onions, chopped (for garnish)
- 1/4 cup Non-fat Greek yogurt or light sour cream (for garnish)
Instructions

In large stockpot, heat canola oil over medium heat.

Add onions and saute until translucent.

Add garlic and stir for another minute.

Add chicken stock and potatoes.

Bring to a boil and boil for about 15 minutes until potatoes are soft.

Reduce heat to low and add milk, stirring to combine.

With an immersion blender, blend potatoes and milk until creamy (or, use a regular blender, blending small batches until smooth and return to pot).

Add 1 cup of cheese and stir until the cheese melts.

Add salt and pepper to taste and serve with remaining 1/2 cup of cheddar cheese, green onions, and non-fat Greek yogurt as garnish.
