Fresh zucchini has got to be one of my favorite things about summer! As long as I am out in my garden picking zucchini, I might as well pick some of my sun - ripened san marzano tomatoes to use in this dish in place of the canned. This dish could easily be made vegan by substituting the parmesan with some bread crumbs or nutritional yeast.
