Resembling miniature cabbages, Brussels sprouts are low in calories, yet full of important vitamins and minerals. And they are high in dietary fiber, supporting digestive health and regulation of blood sugar. While the Brussels sprouts are roasting, it's time to make the Sun-Dried Tomato Pesto. All you need are fresh garlic, jarred sun-dried tomatoes in olive oil, fresh basil, pine nuts, nutritional yeast, salt and pepper, and a little olive oil."

When I have an abundance of garden tomatoes, I like to cut the smaller ones in half and throw them in my food dehydrator. It is a great way to replicate the flavor of the fancy sun dried ones in a jar, and at a fraction of the cost! They keep very well in the fridge if you cover them with oil, and will last for over a year in the freezer!
