Mango Tofu Summer Rolls with Spicy Peanut Sauce
"Mango Tofu Summer Rolls are a delicious warm-weather appetizer or meal. Even if you’re not an expert at rolling them (I’m certainly not!) you’re sure to enjoy the flavors of mint, cilantro, red bell pepper, mango, avocado, and savory baked tofu. And don’t forget the Spicy Peanut Sauce! I like to buy baked savory tofu from the supermarket when I make these rolls so that I don’t have to do any actual cooking. I know it’s not difficult to bake tofu, but I tend to make the rolls when I’m looking for a cold dish and don’t want the kitchen to get too hot from the oven. But you can certainly prepare your favorite tofu and use it in this recipe."
NotesEven if your summer rolls are messy, even if they fall apart when you eat them, they are still going to taste great.

Ingredients
- 10 Spring roll wrappers
- 1 Bunch mint leaves
- 1 Bunch cilantro
- 1 Red bell pepper
- 1 Mango
- 1 Avocado
- 6 ounces Savory baked tofu
- 6 tablespoons Peanut butter
- 4 tablespoons Tamari
- 1 tablespoon Sriracha

Bursting with color and fresh healthy flavors, these would be the perfect appetizer to serve at your next plant - based dinner party, or as a fun and healthy summertime lunch option for the kids! In the winter time, canned mango could certainly be used, but I love the sweet tropical flavor of the fresh. The peanut sauce is awesome!
