    This recipe couldn't be simpler. The ingredient list may be a bit daunting, but when you see the instructions, you'll definitely want to try this one. The ingredients are all low-fat, so it's okay to indulge in a little red meat once in a while, just be sure to keep portions small.

    Ingredients

    • 3 1/2 pounds lean beef short ribs
    • 1 tablespoon vegetable oil
    • 1 large onion, cut into wedges
    • 1 1/4 cup water
    • 1 cup ketchup
    • 1/3 cup red wine vinegar
    • 1 tablespoon paprika
    • 1 teaspoon curry powder
    • 1/2 teaspoon chili powder
    • 1/2 teaspoon dry mustard
    • 2 teaspoons salt
    • 4 medium potatoes, peeled
    • 4 medium carrots, pared and cubed
    • 1 tablespoon cornstarch (optional)

    Instructions

    1. Place all of the ingredients into your slow cooker, and stir to combine.
       
    2. Cook on low for 6 to 8 hours.
