This is such a simple recipe that anybody could make, as long as you know how to boil pasta! If you don't have any cooked chicken on hand, you can use cubed ham- a great way to bring new life to leftovers either way! In the summer when I have a ton of fresh basil in my garden, I like to make my own pesto for this - it comes together in my mini food processor in seconds!

Pesto and pasta are a great combination and there are lots of variations. I usually omit chicken and other meat and simply roast some vegetables in the oven like chopped peppers or chopped asparagus. I toss cooked pasta with the pesto and veggies and sprinkle with parmesan cheese. Yum!
