I had something similar to this at a party once that was wrapped in bacon. Surprisingly, (I love bacon...) I really like these lighter ones better, since the jalapeno "boat" doesn't fill up with grease. These would make a great side accompaniment to your next Mexican themed meal, and you don't even have to get out a deep fryer!

Once I pick the last of my jalapeno peppers, my dad and I will have to make these. We LOVE jalapeno poppers, and these look much easier
