I love canned beets, but never attempted to cook fresh beets, until now. This Mediterranean Beets with Garlic and Olive Oil recipe is the answer to a beet lovers dream. I roasted the beets for the preparation and they turned out great. This is such a simple salad, but it really has great flavor.
